volunteering

Hi everybody,
I'm french and I'm planning to go to central america next year. It would be nice if somebody could give some informations about volunteering.
I did some biological studies that's why I'm seeking for environmental projects (in parks or whatever).
I would like to settle for a while, I know some friends who said me Central America is likely to be suitable for me and for this kind of interests.
