Question

I need an english recipe version, for the nacatamale, made with pork meat. Do you cook the pork before you put it in the masa? Or does the pork meat cook when you cook the nacatamale? Please help???

I agree I like eating them too. But would still like to know, anyone out there know anything about nacatamales???

The raw pork cut in cubes is placed inside the masa as part of the relleno and it cooks together with the rest of the nacatamal.

Wink Recipe for nacatamales

The meet you have to first marinate it with achiote, garlic, onion, salt, sour orange,black pepper. But don't cook it before you make the tamal,you put the meat raw on top of the "masa". The masa is the one you cook before (with a lot of water, compare to the amount of corn meal), but the consistency of the masa when you cook it, has to be almost liquid. It'll solidify when cools down. The cooking time for nacatamales (wraped) is about four hours. You can't change this because this process in necesary for the full flavor of the food. Be aware that if you really want a good results don't change the steps. For the masa prepare a sofrito with pork fat, onions, green peppers, tomatoes, and add it to the masa, salt/pepper it. And if you like the flavor of sour oranges, add it to the masa too. Don't forget that the only allowed herb in the tamal is mint (yerbabuena). Enjoy it!!!
