Hi: Indio Viejo se hace de esta manera. 2-3#,Skirt steak boiled and shredded. My mother made it with old tortillas remojadas ( about 6-12 tortillas)and then they were grinded or molidas until you have a paste. I believe you can use or substitute, corn meal like mush. Fry meat and mush adding saute onions, chopped green bell pepper, salt, cut tomatoes, and two or three sprigs of mint,. Add water to satisfy your consistency, salt, naranja agria or lemon to mixture, all of these to your taste. Hope this help. Chalia
